I love my slow-cooker. I love my coffee. I love pumpkin. All wonderful things, please meet in my kitchen.
This recipe is absolutely perfect for busy, chilly mornings or evenings after dinner. I love the idea of a special post-dinner coffee drink for Thanksgiving and Christmas meals! And the beauty of this is that it’s also just as delicious on a regular Thursday morning or afternoon. Nice and simple = less stress. Cheers!
Slow-Cooker Pumpkin Spice Latte
2 c. milk
1-1/2 c. brewed espresso or 3/4 c. strong brewed coffee {adjust to taste}
2 T. canned pumpkin
2 T. sugar
2 T. vanilla extract
1/2 tsp pumpkin pie spice {This makes for a pretty ‘spiced’ flavor – adjust to your taste}
Garnish: whipped cream & cinnamon {The garnish makes the whole drink. Don’t skip it!}
Combine milk and espresso or coffee in a mini slow-cooker. You can absolutely cook on the stovetop instead. Whisk in pumpkin, sugar, vanilla and spice until combined. Cover and cook on high setting for 2 hours or until warmed through {mine takes about 90 minutes to warm}. Whisk again before serving. Top mugs with a dollop of whipped cream and sprinkle with cinnamon. Serves 2-3.
Invite a friend over and warm hearts right alongside your mugs. Enjoy! =)
