Just a quick little recipe for your midweek! It’s from Gooseberry Patch’s new 101 Stovetop Suppers (which you can enter to win a copy of here!) Keeping it simple because I have a toddler who doesn’t sleep well, a board meeting for work tomorrow, so.many.documents. to edit for (in)couragers, and an overflowing inbox. If your brain is as full as mine is, do it a favor and make this for supper tonight.
Skillet Lasagna
from 101 Stovetop Suppers

1lb. ground beef
1 onion, chopped
1 clove garlic, chopped
14-1/2 oz. can diced tomatoes {I doubled this and it was just right}
1-1/2 c. water
6-oz can tomato paste {I left this out, and it would be good with it added}
1 Tbsp. dried parsley
2 tsp. dried oregano
1 tsp. salt
2-1/2 c. bowtie pasta, uncooked {I subbed whole wheat rotini}
3/4 c. small-curd cottage cheese {I subbed ricotta}
1/4 c. grated parmesan cheese
In a large skillet over medium heat, brown beef, onion and garlic; drain. Add tomatoes with juice, water, tomato paste and seasonings; mix well. Stir in pasta; bring to boil. Reduce heat, cover and simmer for 20 to 25 minutes, until pasta is tender, stirring once. Combine cheeses; drop by rounded onto pasta mixture. Cover and cook for 5 minutes. Serves 4.

Yummy! This looks so good, and way easier than normal lasagna! I bet you could even add some mozzarella on top and throw it under the broiler for awhile to get that browned top. 🙂 (Also… I get you on the crazy full brain. Here’s to easy dinners and making time to rest!) xoxo
