Last week I made a couple recipes from the brand new, not even available on bookshelves yet, Gooseberry Patch Big Book of Home Cooking. And I’ll just say… yum! In keeping with the whole going MIA after a big post, of course I couldn’t find my camera for this first recipe, so all pics are taken with my cell. {smacking forehead}

Here’s Golden Chicken Divan. It took about 20 minutes to prep and 15 minutes to bake. Pretty great for a weeknight meal! And it was deLISH. The combo of soup and cheese… mmm! Great comfort food. Husby loved it. He ate half the pan. =)
Golden Chicken Divan

1lb broccoli
1 1/2 C. cooked chicken, cubed (I used ‘chicken for stirfry’ – it’s pre-cut!)
10 3/4 oz can cream of broccoli soup
1/2 C. sour cream
1/2 t. garlic powder
1/2 t. onion powder
1/4 t. seasoned salt
1/2 C. shredded Cheddar (I used cojack, because that’s what we had =) )
1 T. butter, melted
2 T. dry bread crumbs
Cover broccoli with water in a saucepan; bring to a boil over medium heat. Cook 5 minutes or until tender; drain. (I used frozen steamer bags and tossed them in the microwave). In a large bowl, combine broccoli, chicken, soup, sour cream, garlic powder, onion powder and salt. Spread in a greased 8×8 pan; sprinkle with cheese. Mix together melted butter and brread curmbs; sprinkle over cheese. Bake uncovered at 450 degrees for 15 minutes or until bubbly and golden. Serves 6.
