Busy-Night Taco Bake
Gooseberry Patch

1lb ground beef
1-1/4 oz. pkg. taco seasoning (I used my homemade seasoning)
3/4 c. water
6 6-inch flour tortillas
2 c. shredded Mexican blend cheese, divided
1 to 2 c. salsa

Brown beef in a skillet over medium heat; drain. Stir in taco seasoning and water; simmer for 5 minutes. Cover the bottom of a lightly greased 9×9 pan with 3 tortillas. Top with one cup cheese and all of the beef mixture. Layer with remaining tortillas, salsa and 1/2 cup cheese. Bake, uncovered, at 350 degrees for 15 minutes. Top with remaining cheese. Bake for an additional 5-10 minutes, until bubbly and cheese is melted. Serves 4. We topped ours off with some sour cream, and next time we’ll add lettuce & black olives on top too.
