This was a super simple addition to our grilled pork chop supper last week. See, you can make harvest recipes even when it’s 80* outside! =)

Asparagus Bundles
from the Harvest Table,
by Gooseberry Patch

one bunch thin asparagus spears, trimmed to 6inches
1-2 T. olive oil
kosher salt and cracked pepper to taste
6-8 slices bacon, halved

In a large bowl, combine asparagus, olive oil, salt and pepper. Mix gently with your hands; let stand several minutes. {You could definitely stop here and just bake as is, without the bacon. The asparagus was delicious just with the olive oil, s&p!} For each bundle, wrap 3-4 spears with a piece of bacon; lay on ungreased baking sheet.

Bake uncovered at 400 degrees for 12-15 minutes, until asparagus is tender and bacon is crisp. Serve warm or at room temperature. Makes 4-6 servings.
