The first recipe I made from the brand-new Gooseberry Patch cookbook, Good-for-You Everyday Meals {the one I’m giving away – enter here!}, was this winner. My little Boy loves oatmeal, and we eat it most mornings. I only make steel cut oats, and always add cinnamon and sometimes apples, so none of the ingredients in this recipe were new to him. But new to me was adding the milk before the oatmeal cooked, and letting my slow-cooker do all the work overnight while we slept! We woke up to the smell of apples & cinnamon, and breakfast was ready to be scooped up. Win!

Overnight Apple-Cinnamon Oats

Good-for-You Everyday Meals

2 apples, peeled, cored and chopped
2 c. milk
1-1/2 c. water
1/2 c. unsweetened applesauce
1 c. steel cut oats
1/4 c. brown sugar, packed
1 T. butter, diced
1 t. cinnamon
1/4 t. salt
Garnish: maple syrup, milk, applesauce, chopped walnuts

Spray a slow cooker with non-stick vegetable spray (we use non-stick EVOO spray). Add all ingredients except garnish; stir. Cover and cook on low setting for about 7 hours. If desired, stir in a little more milk or water to thin to desired consistency. Spoon into bowls; garnish as desired (I used more apples and cinnamon!) Makes 6 servings.
