Soup is, perhaps, the ultimate comfort food. When one feels ill, soup. On a rainy or chilly day, soup. For heartbreak, soup. And so it was that last night, the only thing on my mind for supper was soup.

All is not right in the world. When bombs explode. When we don’t get to meet our babies. When friendships & marriages crack. When the news is simply too awful to watch. When these are the stories that top our Twitter feeds and hearts, all is not right in the world. That these are the news-toppers catches my breath and breaks my heart. I don’t know how to process any of it. That such evil can permeate the lovely is defeating…

…yet the lovely keeps on. Toddlers sit with books, husbands kiss cheeks, and sometimes even the sun peeks out. It would be so much simpler if it were all lovely, wouldn’t it? If friends didn’t move away, if people were kind and generous to one another, if all the babies were healthy. If the sun shone every day, if horrific bombings were fiction alone, if the things on TV shows I can’t bring myself to watch stayed behind the glass.

But, of course, it isn’t. And so we create simple comfort where we’re able. We snuggle our kids & call our moms. We linger at the table, soaking up one another. We don our favorite sweater (yes, it remains sweater weather here in Minnesota.)

We make soup.

Unstuffed Green Pepper Soup

1-1/2 lbs ground turkey
3 green peppers, chopped
1 onion, chopped
2 cloves garlic, minced
2 14-1/2oz. cans tomato soup
2 14-1/2 oz. cans low sodium beef broth
28-oz. can crushed tomatoes
1-1/2 c. cooked brown rice

In a large stockpot over medium heat, brown turkey with peppers, onion and garlic; drain. Stir in soup, broth and crushed tomatoes with juice; bring to a boil. Reduce heat to low. Cover and simmer until slightly thickened, about 30 minutes. Stir in rice just before serving. Serves 10.
